Fructose is a naturally occurring sweetener found in fruit. In diabetics who have adequate insulin available, fructose causes a slower rise in blood glucose levels than other simple sugars. Although this nutritive sweetener is more slowly digested and absorbed than sucrose containing sugars, it still contains calories and must be counted in the diabetic meal plan.
Isomalt is a fairly new sugar substitute. It does not produce sharp increases in blood sugar or insulin levels.
